“Breakfast of Champions” Gluten Free Croissant

Let’s face it, croissants are in a realm of their own. Buttery, rich and flaky. To enjoy one you could say, is one of the world’s most wonderful pleasures. For the time it takes to create them, they truely are an amazing bakery treat . The list of fillings for croissants are endless & this is a great way to indulge & create the perfect little brunch, to enjoy solo or with family and friends. Our gluten free croissants and dairy free options are available in store daily.

Gluten Free Croissant with Basil pesto, Peppers, Rocket and Scrambled Egg.

Ingredients

  • 1 AWPC Gluten Free Croissant ( Order online here) or Dairy free croissants available in store.

  •   1 Tblsp Ricotta or Cream Cheese ( or DF cream cheese )

  •   1 tbsp fresh Pesto (you can find the recipe for homemade pesto here or use a good store bought pesto)

  •   1 large strip of fire roasted peppers

  •   Fresh Rocket

  •   2 eggs, scrambled

  •   Fresh Chives, chopped for garnish

  •   Salt, to taste

  •   Ground black pepper

Instructions

  1. Warm croissant- Heat croissant in the microwave to take the chill out of it for 30 seconds. Heat in the oven or air fryer for 15 min at 150c.

  2. Make basil pesto from our recipe found here. Or if using a store bought pesto continue on to step 3.

  3. Warm you peppers in the oven from the residual heat of the oven.

  4. Scramble you eggs.

Assemble -

  1. Cut the AWPC Gluten Free Croissant in half through the middle and put either side face down in warm pan and toast.

  2. Spread ricotta/cream cheese and basil pesto on the base of the croissant.

  3. Layer with warm roasted pepper strips

  4. Layer with fresh Rocket

  5. Top with scrambled eggs, garnish with chopped fresh chives and salt n pepper.
