Pesto alla Trapanese ( Sicilian Pesto)
This is a really lovely different style of pesto originating from southern Italy in Sicily. This tomato based sauce comes together really easily and is a great alternative to the regular basil pesto we are all so familiar with. Make sure the blanched almonds are toasted and you use a nice aged pecorino for that flavour hit. We used it as stir through sauce with a gourmet 5 vegetable gluten free fusilli pasta that’s made right here in Queensland by Artisan Pasta. It’s cooked up great and kept its shape beautifully. Will definitely be buying it again. Available in IGA supermarkets or online through their website. They are coeliac safe. If you’re keeping off the carbs you can also toss it through some blanched veggies to make them a little less boring.
Ricotta Pesto Toast
It’s doesn’t get much better than this garlic pesto brunch toast. It’s got all my favourite flavours going on and is so fresh and versatile. Add a poached egg and balsamic glaze, squeeze of lemon and cracked pepper, dress it up how ever you like! But do yourself a favour and give it a go. We used our gluten free focaccia loaf but you can use any loaf of bread you like. It will go great with our Artisan loaf also which adds a great crisp texture when toasted. Cheesy Garlic Pizza Bread
I don’t know anyone that says no to pizza, gooey cheesy goodness! What’s not to love. Even better when it takes 30 minutes to make. We use our gluten free focaccia but you can use what even gluten free bread you like. You can also use rolls cut in half for smaller single ones using both sides. The possibilities are endless and totally delicious. You can also make these up and freeze them for quick snacks mid week when short on time. For dairy free just swap the cheese for a Dairy Free version. You can find our breads and rolls available in store daily.
Garlic Confit/Garlic Oil
Slow cooked confit garlic is an amazingly versatile ingredient to have in you kitchen. With minimal prep time you get the added bonus of making garlic oil, a darn site cheaper that the bottled garlic infused oil you find at the supermarket. The confit garlic slow cooked brings out the sweet butter texture and none of the bitterness raw garlic has. You can add to many different dishes, caramelised, smashed or spread, its a perfect addition of flavour to you next savoury recipe. Gluten and Dairy Free

“Bloody Good” Asian Popcorn Chicken
This is one of my all time favourites. I LOVE making this. It’s got to be one of the tastiest things you will ever eat, and you wont be able to stop at just one! With minimal prep time you will definitely be making this time and time again. You can use the marinade on other meats in different recipe’s and it goes great in fried rice. “ Two Ways” Vanilla Custard
Theres a time for using custard powder…. & then there’s a time when you crave that good old traditional custard. You know the one, thick n creamy with a good hit of vanilla! Well this recipe is the one for you. It can be made either for pouring, or thicker for desserts. The choice is up to you. Dairy Free opions included.
“Feel Good” Soup
This is a great alternative to the good old chicken soup for when you’re feeling under the weather. Packed full of veggies and nutrients, has an amazing vibrant colour and is super quick to make. Freezes well for easy mid week meals when you’re busy and pairs beautifully with our AWPC Artisan loaf. This recipe is naturally gluten free and dairy free, however if you’re not a fan of coconut milk feel free to substitute it for regular milk or thin cream.
Basil Pesto
Pesto is one of the most versatile gluten free sauces you can have on hand in the fridge and making your own instead of cheating with store bought…. Well let’s say once you have tried fresh made, you cant go back! That perfect blend of fresh herbs, nuts, Parmesan and garlic. Use it tossed through pasta, on top of pizza, add it to your grilled sandwiches, poached eggs, crackers with sliced tomato and cracked pepper & what ever else your heart desires. All you need is a small food processor and it’s super quick to whip up. We use cashew nuts instead of pine nuts as they are a little more budget friendly at half the price but if you really want that nutty flavour you can swap it out either way. Need it dairy free? Just leave out the Parmesan cheese.
”Three Ways” Caramel Sauce
Smooth, rich n sweet! Once you’ve made your own caramel sauce, you will never use store bought again! Here are my three “go to” recipe’s for amazing caramel sauce, i promise once you make them you wont look back. Yes, you need to keep an eye on the sugar during the caramelisation process but it’s totally worth it. These are Gluten Free but not Dairy Free so you will have to stick with me as I’m still working on that little project.
